So yesterday I made these peanut butter cups and I absolutely love them! My favourite Ben&Jerry’s is peanut butter cup because of the small chunks of – guess what: peanut butter cups they put in there. Hence why I tried to make some of my own, but guiltfree! So these are for when I want to treat myself without cheating on my diet. The recipe’s perfect for clean eating since the cups don’t contain any transfats, refined sugar or any preservatives.
- 2/3 cup melted coconut oil
- 3/4 cup raw cocoa powder
- 2 tbsp rice malt syrup/maple syrup (you can also use stevia)
- 1/3 cup peanut butter
- 1 tbsp sea salt
While melting the coconut oil, prepare 6 regular (or 12 mini-) muffin layers on a tray.
Place the coconut oil, cocoa powder, and syrup/stevia in a bowl and mix them until smooth.
Pour the chocolate mix into the base of each muffin layer. Fill them to roughly a third.
Place the tray in the freezer for 10-15 minutes until the mix is set.
Spoon peanut butter into each of the molds; how much is up to your personal preference.
Using the remaining chocolate mix, pour over the peanut butter until it’s completely covered. Sprinkle each cup with a small amount of salt.
Put the tray in the freezer again for the second chocolate layer to set.
Remove from molds and enjoy! ♥
